Ingredients
1-3/4 cups All-Purpose Flour 1 Tbl Baking Powder 1 tsp Kosher Salt 2 cups Buttermilk 2 ea. Eggs 1 tsp. Vanilla 2 Tbls. Vegetable Oil (2 tsp.) 1 cup Cinnamon Swirl 1 cup Vanilla Icing (or any vanilla icing from the supermarket) Optional: Powdered SugarInstructions
First, combine the flour, baking powder, and salt in a mixing bowl, stirring until evenly mixed. Set it aside.
In another bowl, mix the buttermilk, eggs, vanilla, and vegetable oil (one tablespoon).
Pour the dry ingredients into the wet ingredients, folding them together until you have a smooth batter with a few small lumps remaining. Avoid over-mixing the batter.
Heat 1/4 tsp. of vegetable oil in a griddle or non-stick pan. Pour the batter into the pan using a 4 oz. ladle to form one pancake about 6” in diameter.
Drizzle equal amounts of cinnamon swirl onto each pancake in a spiral motion.
Cook the pancakes for approximately 2-1/2 minutes or until the edges begin to dry and air bubbles start appearing over the pancakes' surface. Flip and cook for another 1-1/2 minutes or until done.
Place two pancakes on each serving plate, drizzle with vanilla icing, and optionally sprinkle with powdered sugar.
Cinnamon Swirl Recipe
3 Tbls. Butter 5 oz. Brown Sugar 1/2 tsp. Cinnamon 1 Tbl. CreamMelt the butter in a pot, then add the brown sugar and cinnamon to cook until the sugar melts. Add the cream and whisk to incorporate. Use this mixture as a topping for the pancakes.
Vanilla Icing Glaze Recipe
4 tablespoons butter 2 cups powdered sugar 2 to 4 tablespoons milk or hot water for desired consistency 1 1/2 teaspoons vanilla extractMelt the butter in a saucepan or microwave. Sift the powdered sugar into a bowl, then mix in the melted butter, milk or hot water, and vanilla extract. Beat the mixture until smooth and creamy, adjusting the consistency as needed.
